This is one of my favorite recipes. These patties are tasty, healthy, freeze well, and are easy for a toddler to eat unassisted. Use them as a snack, as a side-dish or even as a main-course. They have great nutritional value. And they are delicious! – I eat them too, but add salt to mine.
Ingredients
- 4-5 sweet potatoes
- 2,5 dl lentils (uncooked) or ca. 5 dl cooked
- 1 egg
- 2-3 dl flour
- 1 dl Olive oil
- 1-2 tsp dried ground coriander
- 1-2 tsp paprika
- Fresh coriander to taste (the sky is the limit!)
- Optional: 2 dl chickpeas
- Optional: Orange zest and juice
How to
- Heat oven to 180c
- Rinse the lentils in water, and boil them for approx 15 min. in a pot. Boil sweet potatoes in a microwave-safe container covered with water, for approx 8 min.
- Leave lentils and sweet potatoes to cool a bit in a bowl.
- Rinse and chop coriander. Add coriander together with olive oil, egg and spices to the bowl (optional: add pre-boiled chickpeas and/or orange-zest with the rest), and stir with a fork or similar. Add flour until the consistency is coherent and sticky.
- Use a spoon or your hands to make cookie-sized patties on a sheet of baking-paper.
- Bake for approx 25 min.
- Eat, save, freeze and store!
