This is one of my favorite recipes (ie. our toddlers love them!) for a healthy, tasty and easy afternoon or on-the-go snack (the other one you’ll find here#Link). It came about as I was tidying up the fridge, and I urge you to have the same unceremonious approach to baking them, as I had inventing them. Leave out stuff or exchange as you please – there are tips to how to go about it in the bottom of this post. But here is how I do it:
Wet-ingredients:
- 1 Apple
- 1 Pear
- 1 Squash/zucchini
- 1,5 dl butter-beans
- 1,5 dl cheese
- 1 dl plant oil or (salt-free) butter (depending on age)
- 1 vanilla pod
- 2 eggs
- 2,5 dl yoghurt + more for consistency
Dry-Ingredients:
- 5 dl spelt-flour + more for consistency
- 4 teaspoons baking-powder (less might do – I think I’ve got a rather crappy one in my pantry)
How to:
- Turn on oven to 180 c
- Mix dry ingredients in a bowl and put aside. Leave the flour out, you are probably going to need it again.
- Shred/grate pear, apple, squash, and cheese into a bowl. Cut vanilla pod down the middle, and scrape out the contents with a knife. Add vanilla, eggs, oil/butter, and yogurt to the mix and stir it all together.
- carefully and gradually add the dry ingredient to the wet, avoiding stirring it way too much. Add more yogurt and/or flour if necessary, to get a coherent and sticky texture.
- Line a muffin-pan with muffins-cups. Fill these approx 3/4 with the dough.
- Place pan in preheated oven, baking for approx. 20 minutes. Depending on the oven, and the exact size of your muffins it can be anywhere from 15-25 min., so check up on them the first time you prepare this recipe.
- Serve, enjoy, freeze and store! – One batter will amount to ca. 20 food-muffins.
Cheat-sheet:
If you don’t have the ingredients above at hand, you can always alter the recipe. Use two pears and leave out the apple, and vice versa. Exchange the squash for five carrots. Use regular whole-wheat or wheat-flour instead of spelt. Use another kind of beans, or leave them out entirely. Milk instead of yogurt etc. Just make sure you end up with a good and sticky texture in the end, adding either more flour or milk to achieve it. Happy baking <3
